Borage leaves can be sautéed with other greens or chopped up and put in salads. The leaves have a minor rough prickliness.

Borage flowers and young leaves are a wonderful, edible treat with a mild cucumber flavor. Young green leaves are a nutritional powerhouse much like spinach. Sauté them lightly in oil for a dish high in vitamins A and C, iron, and niacin.
